There are some people out there, and I used to be one of them, who never thought to eat anything but instant oatmeal packets. But what fun is that? When is boiling water and reconstituting a whitish-gray powder a good way to start the morning? The answer is never. So, I give to you my favorite breakfast recipe.
1 cup McCann’s Irish Oats
1 tsp. almond or vanilla extract
sliced frozen peaches
1/4 cup slivered toasted almonds
2 tsp. brown or raw sugar (or molasses if you dig that)
Steps to oatmeal success:
The night before: In a medium saucepan boil four cups of water. Add one cup of Irish Oats and stir until all the water is absorbed. Turn off heat, cover the pot and leave it alone overnight.
Next Morning: Bring the oats to a brisk boil. Stir and cook until the oats are tender. Add cinnamon (don’t be shy, now) and almond or vanilla extract. At the same time place several frozen slices of peaches in the microwave. Defrost peaches and set aside.
Pour the oatmeal into a bowl (or two). Add peaches on top, sprinkle with sugar and almond slivers.
Enjoy the most important meal of the day.
